Total Time: ~10 minutes

Ingredients
- 2 large eggs
- ¼ teaspoon salt
- ¼ teaspoon turmeric powder
- ¼ teaspoon finely chopped green chilli
- 2 tablespoons finely chopped onion
- 1 teaspoon chopped coriander (cilantro) leaves
- 1 tablespoon water or milk
- ½ teaspoon butter (plus extra for toasting)
- 2 slices of sandwich bread
- Pinch of freshly ground black pepper
- 1 teaspoon mayonnaise (optional)
Instructions
➜ Crack the eggs into a bowl and add salt, turmeric, chopped green chilli, chopped onion, chopped coriander and water or milk. Whisk briefly until combined.
➜ Heat butter in a nonstick pan over medium heat. Once the butter melts and the pan is hot, pour the egg mixture into the pan and swirl to cover the base.
➜ Place the two bread slices on top of the omelette mixture, pressing lightly so the bread contacts the egg. Immediately flip the bread slices so the egg-coated side comes down onto the pan. Sprinkle black pepper.
➜ Cook for about 30 seconds on one side then flip the sandwich (omelette + bread) and fold the omelette over the bread. Add a little butter so the bread toasts and becomes crisp.
➜ Spread mayonnaise on one side if using, fold the sandwich, cook the sides until golden, remove from the pan, cut into four pieces, garnish with coriander and serve hot.

Pro Tips (FAQ-Style)
Can I use different types of bread?
Yes. Milk bread, brown bread, whole-wheat or white bread all work. Choose bread that can absorb the egg without falling apart.
How can I make it more filling or flavorful?
Add fillings like cheese, finely chopped tomatoes, bell pepper or even cooked mushrooms. For a quick flavor boost, include a slice of cheese before folding.
What makes the yellow colour?
Turmeric adds the warm yellow colour and mild flavour—optional, but visually appealing and safe in small amounts.
