Creamy Spicy Potato & Sausage Soup

Cajun Potato Soup is a bold, comforting soup layered with spicy Cajun flavor, creamy broth, tender potatoes and savory sausage. Ingredients

1 tablespoon olive oil
12 ounces Cajun sausage or smoked sausage, sliced
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
3–4 garlic cloves, minced
4 cups peeled diced potatoes
4 cups chicken broth
1–2 teaspoons Cajun seasoning (adjust to taste)
½ teaspoon smoked paprika
Salt and pepper, to taste
1 cup heavy cream or half-and-half
½ cup shredded cheddar cheese (optional)
½ cup chopped green onions or parsley

Instructions

Heat olive oil in a large soup pot over medium heat. Add sausage and cook until browned, about 4–5 minutes. Remove and set aside.
Add onion, carrots and celery to the pot. Sauté until softened, about 5 minutes.
Stir in garlic and cook for 30 seconds.
Add diced potatoes, chicken broth, Cajun seasoning, smoked paprika, salt and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes.
Use a potato masher to lightly mash some of the potatoes for thickness, leaving chunks.
Return sausage to the pot. Stir in heavy cream and cheddar (if using). Warm through without boiling.
Taste and adjust seasoning. Serve hot topped with green onions or parsley.
