Ingredients
1 cup instant oats
¾ cup whole wheat flour or gluten-free flour
2 teaspoons ground cinnamon
1½ teaspoons baking powder

1 large egg

½ cup pure maple syrup

Instructions
Preheat oven to 325°F and line a baking sheet with parchment paper.
Whisk oats, flour, cinnamon, baking powder and salt in a bowl.
In a separate bowl, combine melted coconut oil or butter, egg, vanilla and maple syrup.
Add wet ingredients to dry and stir until combined. If sticky, chill 30 minutes.
Scoop dough onto baking sheet to make about 15 cookies. Flatten slightly to ⅜ inch.
