Ingredients

Muffins:
1 very ripe banana, mashed
⅓ cup sugar
2 tablespoons brown sugar
¼ cup melted butter or oil
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
Pinch of salt

Crumble Topping:
2 tablespoons brown sugar
1 tablespoon granulated sugar
2 tablespoons flour
½ teaspoon cinnamon
1 tablespoon melted butter

Instructions

Whisk mashed banana, sugar, brown sugar, melted butter, egg and vanilla until smooth.
In a separate bowl, mix flour, baking powder, baking soda, cinnamon and salt.
Add dry ingredients to the banana mixture and stir just until combined; do not overmix.
Fill lined muffin cups about three-quarters full.
Prepare crumble topping by mixing brown sugar, granulated sugar, flour, cinnamon and melted butter until coarse crumbs form.
Sprinkle crumble evenly over each muffin.
Bake at 375°F for 17–19 minutes, or until a toothpick inserted into the center comes out clean.
Cool slightly before serving.
