Ingredients

  • 2–4 medium sweet potatoes (depending on serving size)
  • 2 tablespoons unsalted butter
  • 2 medium apples, peeled, cored and diced
  • ½ cup dried cranberries
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 3 tablespoons coconut sugar or brown sugar
  • ¼ cup chopped pecans (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Scrub sweet potatoes clean, dry them, then prick each all over with a fork. Bake for 40-45 minutes or until very tender.
  2. While the potatoes roast, melt butter in a skillet over medium-high heat. Add diced apples, dried cranberries, cinnamon, nutmeg and sugar. Sauté for a few minutes until apples are tender, then stir in chopped pecans and cook an additional minute.
  3. When potatoes are done, cut each in half length-wise and scoop out some of the flesh to make a small cavity, leaving a border so the shell holds its shape.
  4. Fill each potato half with the apple-cranberry mixture. Mound it slightly above the edge of the potato.
  5. Return to the oven for about 10 minutes until the filling is warmed through and the tops are slightly caramelized. Remove, let cool briefly, then serve warm.

What if I don’t have dried cranberries?
You can use fresh cranberries (chopped) or swap in dried cherries for a similar tart-sweet effect.
Can I make this vegan?
