Ingredients

  • 2 large eggs
  • 1 tablespoon cream (or milk/water)
  • ¼ teaspoon salt
  • ⅛ teaspoon chilli powder
  • Black pepper to taste
  • 1–2 tablespoons chopped onion
  • 1–2 tablespoons chopped tomato
  • 1 tablespoon chopped cilantro
  • 1 paratha (or tortilla)
  • 2 slices cheese or equivalent grated cheese

Instructions

➜ Whisk eggs, cream, salt, chilli powder and pepper in a bowl. Add the chopped onion, tomato and cilantro, then stir to combine.
➜ Heat oil in a large pan roughly the same size as the paratha. Once hot, pour in the egg mixture and cover. Cook until the eggs are almost set.
➜ Place the paratha over the cooked eggs and flip so the paratha is on the bottom and the egg is on top.
➜ Add cheese and any optional fillings (avocado, spinach, etc.), then fold or roll the wrap. Add a little oil or butter and crisp both sides until golden.
➜ Serve hot.
