Ingredients

1 pound ground beef, or you can use ground turkey, ground chicken
3 cups diced potatoes
1 small onion, chopped
1–2 garlic cloves, minced
1 bell pepper, diced (optional)
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon garlic powder
Salt and pepper, to taste
2 tablespoons olive oil
¼ cup broth or water
Fresh parsley or green onions for garnish

Instructions

Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden and beginning to soften, about 10–12 minutes. Stir occasionally.
Push potatoes to the side of the skillet. Add ground meat to the open space and cook until browned, breaking it into crumbles.
Add onion, garlic and bell pepper. Cook until softened, about 3–4 minutes.
Season with paprika, Italian seasoning, garlic powder, salt and pepper.
Pour in broth or water, cover skillet and cook 5–8 more minutes, letting potatoes finish cooking and flavors blend.
Uncover and cook an additional 2 minutes to evaporate extra liquid if needed.
Taste and adjust seasoning. Garnish with parsley or green onions before serving.
