Ingredients

  • 4 boneless, skinless chicken breasts (approx. 2 lbs)
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • ⅛ teaspoon pepper
  • 3 garlic cloves, minced
  • ½ cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 ½ cups fresh baby spinach, chopped
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Season the chicken breasts on both sides with salt, Italian seasoning, paprika and pepper.
  2. Place the seasoned chicken into the slow cooker.
  3. In a medium bowl, whisk together heavy cream, chicken broth, Parmesan, cornstarch (if using), garlic and sun-dried tomatoes. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on LOW for about 3–4 hours (or HIGH for about 2–3 hours) until the chicken reaches 165 °F and the sauce is bubbling.
  5. In the last 10 minutes of cooking, stir in fresh spinach. Cover and allow the spinach to wilt.
  6. Taste and adjust seasoning if needed. Garnish with parsley or basil, then serve the chicken breasts topped with sauce. Recommended sides: pasta, mashed potatoes, rice or steamed vegetables.
