Ingredients

1 tablespoon olive oil or coconut oil
1 small onion, diced
3 garlic cloves, minced
1 tablespoon grated fresh ginger
1 red bell pepper, sliced
1–2 carrots, thinly sliced
2 tablespoons Thai red curry paste
4 cups chicken broth
1 can (13.5 oz) coconut milk
2 cups cooked shredded chicken
1 tablespoon fish sauce (optional, adds depth)
1 tablespoon lime juice
1–2 teaspoons soy sauce or coconut aminos
Salt and black pepper, to taste
1 cup baby spinach or chopped kale
Fresh cilantro and lime wedges for serving

Instructions

Heat oil in a large pot over medium heat. Add onion and sauté until softened, about 3 minutes.
Add garlic, ginger, bell pepper and carrots. Cook another 2–3 minutes.
Stir in Thai red curry paste and cook for 30 seconds to release flavor.
Pour in chicken broth and bring to a simmer for 10 minutes.
Add coconut milk, shredded chicken, fish sauce (if using), lime juice and soy sauce. Simmer 5 minutes.
Stir in spinach or kale and let wilt. Taste and adjust seasoning.
Serve hot with cilantro and lime wedges.
