Ingredients

  • 4-6 large flour tortillas (or gluten-free tortillas if needed)
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or thawed frozen)
  • 1 red bell pepper, thinly sliced
  • 1 small red onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 1 ripe avocado or ½ cup guacamole
  • ½ cup vegan shredded cheese (optional)
  • 1 cup lettuce or spinach, shredded
  • ½ cup salsa or pico de gallo

Instructions

➜ Heat olive oil in a skillet over medium heat. Add the red onion and bell pepper and sauté until softened, about 3-4 minutes.

➜ Lay a tortilla on a flat surface. In the centre, layer some of the lettuce or spinach, followed by the bean-rice mixture, a spoon of guacamole or sliced avocado, salsa, vegan cheese (if using), a little chopped cilantro and a squeeze of fresh lime juice.
➜ Fold the sides of the tortilla in, then roll from the bottom up to form the wrap. Repeat with remaining tortillas and filling.
➜ For extra crispiness, you can lightly toast each wrapped burrito in a dry skillet for 1-2 minutes per side. Serve with extra salsa or hot sauce on the side.
