2 tablespoons olive oil
1 medium onion, diced
3 garlic cloves, minced
16 ounces mushrooms, sliced (button, cremini or mixed)
1½–2 cups seitan pieces
1 teaspoon smoked paprika
1 teaspoon thyme
2 tablespoons soy sauce or tamari
1 cup vegetable broth
1 tablespoon flour (or cornstarch slurry for gluten-free)
¾ cup dairy-free sour cream or coconut cream
Salt and black pepper to taste
Fresh parsley for garnish
Cooked pasta, rice or mashed potatoes for serving

Instructions

Heat olive oil in a large skillet over medium heat. Add onion and sauté until softened.
Stir in garlic and cook briefly until fragrant.
Add mushrooms to the skillet and cook until they release moisture and begin to brown.
Add seitan, smoked paprika, thyme and soy sauce. Stir to coat and cook a few minutes.
Sprinkle the flour over the mixture or add a cornstarch slurry. Pour in vegetable broth and stir until slightly thickened.
Reduce heat and stir in dairy-free sour cream or coconut cream. Simmer until the sauce becomes creamy and glossy.
